New Technology Benefits Celebrity Chef
Chef Joseph Keller touts new PureOFlow technology

(Las Vegas)—World-renowned celebrity Chef Joseph Keller is one of the first chefs in Las Vegas to take advantage of the benefits of PureOFlow’s latest technology—its Reverse Osmosis water filtration system.

Keller, the award-winning chef and co-owner of the famed French Laundry and Bouchon restaurants in Napa Valley, Calif., Bouchon at the Venetian, and owner of Como’s, began his relationship with the Las Vegas-based company in March 2006.

As Keller was preparing to launch his latest restaurant Bistro Zinc, in luxurious Lake Las Vegas, he selected PureOFlow as the provider for the upscale restaurant’s water filtration system.

“PureOFlow saves the equipment we use in a restaurant from the harsh effects of the Las Vegas water,” said Keller. “The minerals in the water here would normally eat through our equipment, but with the new reverse osmosis water filtration system, that does not happen. In the past, we used soft water which still left spots.”

Keller, who also owns Comos, only a few paces from Bistro Zinc at Lake Las Vegas, does not have PureOFlow operating in that business.

“The difference is huge,” he said. “We have to repair and fix everything there on an annual basis.”

According to Keller, using pure water, versus soft or filtered water, obviously also allows for a better taste and color in the food, virtually spot-free dishes and glasses and the longer life of kitchen equipment, including steamers, beverage machines and espresso makers.

“I am incredibly happy with having PureOFlow at Bistro Zinc,” he said. “My customers notice the difference in the taste of the food and the water we serve, and management notices the difference in the way it effects the bottom-line. We no longer have to replace things on a regular basis. I fully intend on outfitting future restaurants with this new technology.”

The reverse osmosis system utilizes a GE patented technology and is able to provide the ultimate in water purification. Certified by NSF International/ANSI, the authority on water treatment device standards, it removes nearly all of the substances found in tap water by passing it through a series of filters and membranes to reduce up to 98 percent of substances, such as arsenic, lead, radium and salts—some particles as small as 1,000th the width of human hair. The carbon/sediment pre-filter and two reverse osmosis membrane elements produce the highest quality water possible. Utilizing a direct reverse osmosis system without the requirement of a storage tank, the system assures high-quality water at consistent recoveries for the food and beverage industry – including coffee machines, ice machines and steamers.
